I've never made them, but bacon-wrapped scallops are a good tasting and low carb option, as is cantaloupe wrapped in prosciutto, which is easier to make because it requires no cooking. You can also get some high quality mozzarella, tomatoes, fresh basil and olive oil. Slice the mozzarella and tomatoes. Arrange the sliced mozzarella on a plate, but a basil leaf or two on each piece of cheese, then top off with a slice of tomato. Drizzle some good quality olive oil over the top, and some salt if necessary.

As a diabetic, I live the life of low-carb everything. Veggie and cheese trays are a hit, as are cold shrimp with a low-carb dip. Also, look for Boca products that can be quickly microwaved, and are delicious, nutritious and low-carb. Morningstar makes some excellent products as well. One or both of these companies makes some great veggie buffalo wings that go great with some hot sauce. Happy Thanksgiving!

You might want to think about various dips made out of pureed veggies (red pepper hummus is great) and veggies for the dip. Also I would look at some of the boca products and stuff mushrooms are excellent. Also bbq'd shrimp are an excellent choice
